This
is not your fathers Dijon mustard!
I start with a reduction Sauvignon
Blanc wine and vinegar, herbs and
spices. The reduction is added to
ultra premium mustard flour and
cooked to the proper consistency.
My mustard starts out with a punch
and will mellow with age. Age the
initial heat fades you will pick
up the intricacies of the wine and
spices! Perfect for everything from
your lunch sandwich to glazing pork
while baking.

mustard is for all the Fire Breathers
in the crowd.
Along with the great
flavor of Dijon Mustard and the heat
of the Wasabi, I have added Juniper
Berries to the mix. As the fire fades;
you are left with the unmistakable
notes of a very fine Gin. This mustard
is begging to be placed on your favorite
hearty bread with backed up with a
bold cheese and some of your favorite
meat.

This is a
great semi sweet mustard that I
use on everything from sandwich’s
to Corned Beef. Whole mustard seeds,
Premium Red Wine Vinegar and Cabernet
Sauvignon add all the spice that
you would hope for, but it does
not end there. I add just enough
honey to give this mustard a great
“round” mouth feel”

| This is a spice blend
that I use for basically all of my hearty
meats when I grill. It has Fine Italian
Sea Salt, 4 pepper blend, numerous spices
and finishes off with Juniper Berries.
You will love the acidic notes that
the Juniper Berries give to this spice
blend. |

To use as a grill seasoning:
Put the desired amount of Rick’s
Wine Jelly Tuscan Grill Seasoning
in a spice mill and grind to a semi
coarse texture, season meat liberally
and grill.
To use as a Marinade:
Combine ½ red wine, ¼
olive oil, ¼ cup red wine vinegar
along with 2-3 tablespoons of seasoning
and let meat marinate for a minimum
of 1 hour and for as long as 8 hours.

This
blend is a balanced blend of spices
with fine French Sea Salt and ¾
cracked 4 pepper corns added. This
spice blend adds a nice depth of character
to both chicken and turkey and accents
the natural richness of duck. You
will love this spice for all your
poultry seasoning. This is almost
an Herbs de’ Provence with a
couple additions. Starting with Italian
Sea Salt, 4 pepper blend, Rosemary,
Sage, Thyme a just a hint of Juniper
Berries.”

To use
as a grill seasoning:
Put the desired amount of Rick’s
Wine Jelly Poultry Grill Seasoning
in a spice mill and grind to a semi
coarse texture to liberally season
your Chicken, Duck or other foul.
Grill over indirect heat to finish.
To use as a marinade:
Combine ½ cup Sauvignon Blanc
or other dry white wine, ¼
cup Olive oil, ¼ cup white
wine vinegar w/ 2 tablespoons seasoning
and marinate for up to 4 hours.
